Serving at Lunch time

Serving at lunch time vs. serving at dinner can be two different beasts... There is a huge "pop" at lunch time where you go from not doing anything to OMG I got triple sat... HOWEVER if you are prepared you WILL survive lunch and maybe even be able to shark some tables so you can come up on some QUICK cash...

LUNCH

- If you get triple sat be sure to lay a napkin on the table and let your table know you will be with them shortly... Tables HATE to sit and not be acknowledge so be sure to touch base...

-FAST PACED is the name of the game for lunch time. If you are groggy from last night be sure to drink some coffee before your shift because lunch is NOT the time to drop the ball. Managers are busy so you DO NOT want to have ring errors at this time...

-Staying "check ready" is a MUST. The faster you can get a table out of the door the faster you will be able to flip it into MORE ca$h.

-Inform guest that items such as steak cooked well done may take a while. Divert them to another option...

- ALWAYS make sure to ask guest if they want the lunch or the dinner portion

-IF you are serving in the bar area be sure to watch your high top tables as a lot of times they are self seating... It is VERY easy to forget about this area...
